Curry from cucumbers with cashew nuts

Stewed cucumbers are considered to be not an invention of the crazy cook, but an ordinary Asian dish. They are very good to be served with rice or fresh flat cakes. If desired, the spiciness of the dish can be improved by adding to your own taste some ground red chili pepper.

List of required products:

  • 300 g fresh cucumbers;
  • 60-70 g of roasted cashew nuts;
  • garlic — 2 cloves;
  • 1 small shallot onion;
  • 2 cm fresh ginger root;
  • 1 green chili pepper;
  • 1 small bunch of cilantro;
  • 3 tbsp. of coconut milk;
  • 1 tbsp. of vegetable oil;
  • 1 tsp. curry;
  • 3 tsp. a mixture of spices garam masala;
  • 5 tsp. mustard seed;
  • pinch of ground turmeric;
  • salt.

Begin to cook


  1. Cucumbers have to be cleaned carefully. Then it is recommended to cut them into medium cubes and salt. Nuts, onions, peppers, garlic and cilantro are finely chopped.
  2. Heat oil over medium fire, put inside the mustard seeds and leave everything for 30 seconds. After that it is time to add onion, garlic, curry, garam masala and turmeric. Then fry for 1 minute.
  3. Add cashews and cucumbers, after 20 seconds. Mix everything carefully, pour inside some coconut milk, mix again and remove from heat. Mix with cilantro. Serve your dish hot.
