Delicious eggplant curry

List of required products

  • 700 g of eggplants;
  • 2 onions;
  • garlic — 2 cloves;
  • 100 g cashew nuts;
  • 2 stars of anise tree;
  • 1 red hot pepper;
  • 400 ml of coconut milk;
  • 4 tbsp. of vegetable oil;
  • 1 stick of cinnamon;
  • 2 tbsp. l. curry powder;
  • 1 tbsp. ground turmeric;
  • 1 tsp. flour;
  • salt

Begin to cook


  1. Eggplants should be cleaned and peeled carefully. After that cut them into average cubes of 2×2 cm. Then turn them over with boiling water and throw in a colander. Let the water drain. Turmeric is mixed with flour. After that roll eggplants in it.
  2. Peel onion and garlic and chop them both finely. Nuts have to be chopped. Spicy pepper is chopped finely. Mind that all the seeds should be removed.
  3. Heat the oil in a wok and fry your prepared eggplants. As a rule, it takes about 6 minutes. Add garlic, onion, spicy pepper, nuts, coconut milk, cinnamon stick, stars of anise tree and curry. Salt and cook for other 7 minutes.
  4. You can always decorate your dish if you like. There is a great amount of ways to do it. The most typical one is to use greenery. What sort to give you preference? – It is up to you to decide.
