Pork chops with Orange and Cashew Nut Stuffing

Ingredients

  • 4 loin pork chops
  • salt and pepper

Stuffing:

  • 1 onion, grated
  • grated rind of 1 orange
  • 50 g cashew nuts, chopped
  • 1/2 tsp sage
  • 1 tsp Dijon mustard
  • 50 g fresh brown breadcrumbs
  • salt and pepper
  • 1 egg, lightly beaten
  • 1-2 tbsp oil

Garnish :

  • orange slices
  • parsley sprigs

Cooking Process

  1. Cut the rind and excess fat off the chops and season the chops with salt and pepper.
  2. Carefully cut each chop horizontally ,leaving joined at the bone.
  3. Mix together the onion, orange rind , cashew nuts , sage , mustard breadcrumbs , seasoning and bind with the egg.
  4. Place the stuffing inside the chops .
  5. Brush with the oil and cook under a medium grill for 8-10 minutes on each side or until the chops are golden and the stuffing is cooked .
  6. Serve garnished with orange slices and parsley sprigs.
