Potted prawns

Ingredients

  • 4 spring onions
  • 450 g peeled cooked prawns
  • 150 ml mayonnaise
  • 2 tsp horseradish sauce
  • 2 tbsp lemon juice
  • Pinch of cayenne
  • Salt and pepper
  • 100 g butter

Garnish

  • Whole prawns
  • Watercress sprigs
  • Curly endive (optional)

Cooking Process

1. Thinly slice the spring onions.
2. Place 225 g prawns in a liquidiser, add the mayonnaise, horseradish, spring onions and lemon juice.
3. Blend the mixture to a paste.
4. Mix the remaining prawns into the paste.
5. Add the cayenne, salt and pepper.
6. Press the prawn mixture into individual ramekins.
7. Melt the butter in a small saucepan, then pour it over the potted prawns, dividing the quantity evenly between the ramekins.
8. Refrigerate until the butter is firm, about 30 minutes.
9. Garnish the potted prawns with whole prawns, watercress and curly endive, if liked, and serve with hot buttered toast.
