If you have a garden, then try drying some herbs for the winter. Sage , thyme and tarragon, for example, can be tied in bunches and hung in a cool, dry place.
- 1 onion
- 100 g button mushrooms
- 100 g cashew nuts
- 600 ml apple juice
- Salt and pepper
- ¼ tsp dried mixed herbs
- 1 tsp yeast extract
1. Chop the onion and halve the mushrooms.
2. Put all the ingredients into a large saucepan, bring to the boil and reduce the heat to simmer gently for 10 minutes.
3. Pour the soup into individual soup bowls and serve with warmed French bread.
