Salad from pork minced meat with rice noodles

This dish is considered to be not a very popular and quite traditional one for people, who are living in Europe or Northern America, but very famous in Southeast Asia. The salad is prepared in some minutes. In addition, it is perfectly stored and soaked in a dressing, it becomes only more delicious.

List of required products:

  • 200 g lean ground minced meat;
  • 100 grams of rice noodles;
  • 2 stems of lemongrass;
  • 2 shallots onions;
  • 1/2 tsp. of sugar;
  • small bunch of cilantro;
  • small bunch of mint;
  • salt.

For the dressing:

  • 1 clove of garlic;
  • 1 red chili pepper;
  • sugar — 1/2 tbsp;
  • juice of 2 limes;
  • 1 tbsp. of fish sauce;
  • 1 tbsp. soy sauce.

Begin to cook


  1. Prepare rice noodles according to the instructions, given on the package (pour with boiling water or cook). Throw into a colander and rinse with cold water.
  2. From lemongrass remove the upper part of the stem, leaving about 8 cm of lower one. Remove the dry outer leaves. Smash the stems of lemongrass with a strong blow of the cleaver (hit with the hard part, not with the blade) or another heavy object. Then cut the stem very finely. Peel the shallots and chop them in the food processor together with the lemongrass.
  3. Heat the oil in a frying pan and fry the spicy paste for 2 minutes. Add minced meat and fry, stirring, for 3 min. Put inside the sugar and cook for 2 more minutes, sprinkle with salt a little.
  4. Peel and finely chop garlic and chili, mix with lime juice, sugar, fish and soy sauce. Put into the bowl of noodles and minced meat. Pour with the dressing. Cut mint leaves and cilantro into large parts and mix with salad.
  5. Try to cook this salad with buckwheat noodles soba. The taste will be different.
