Chocolate Pear Quiche

Ingredients

  • 100 g rich shortcrust pastry
  • 20 cm fluted flan ring
  • 3-4 small ripe dessert pears or drained, cooked pears
  • 50 g plain chocolate
  • 25 g castor sugar
  • Vanilla or almond essence
  • 3 eggs
  • ½ pint cream / milk

Cooking Process

1. Peel, core and chop or slice the pears, arrange them over pastry base.
2. Break chocolate into a bowl, stand it over a pan of hot water.
3. When chocolate is melted, mix sugar and essence into it and spoon over the pears.
4. Beat the eggs well with the liquid and pour into the pastry case.
5. Bake at gas mark 6, electricity 400 ° F (200 ° C) for 10-15 minutes, then at gas mark 5, 375 ° F (190 ° C) for 25-30 minutes.
