Coconut biscuits with berry cream: a quick dessert with exotic taste!

Today we will cook delicious cookies with amazing exotic taste. Its preparation is unusual because of two reasons. Today we will almond flour instead of ordinary one, and add everything with tasty berry cream.

Coconut biscuits with berry cream will become a real highlight of any table. Any berries will be suitable for the cream, but we are going to use blueberries today.

What products to take

  • 100 g — powdered sugar;
  • 7 — egg whites;
  • 60 g of coconut chips;
  • 150 g of sugar;
  • 150 g — almond flour.

Cream:

  • 200 ml — fat cream;
  • 350 g berries;
  • 20 g of corn starch;
  • 100 g sugar.

Begin to cook


  1. To the almond flour, add the coconut shavings together with the sugar powder.
  2. Whisk the whites with sugar until firm peaks are created.
  3. Dry mass is gradually mixed with whipped whites. Please, we do it carefully in order to get the airy mass.
  4. We cover the baking sheet with baking paper.
  5. We fill the confectionery bag with a mass.
  6. Squeeze the circles on the paper at a distance of five centimeters from each other.
  7. We send them into an oven preheated up to 170 degrees. Bake for 20 minutes.
  8. And now it is a high time to deal with cream. First of all we chop the blueberries or other berries in the blender. If it is necessary, grind them through a sieve either.
  9. Mix with starch and sugar, put on moderate fire, bring to a boiling condition.
  10. Boil it until it thickens.
  11. Whisk the cream, mix with the berry mass and whisk it with a mixer.
  12. On one cookie we put enough cream and join with other cookies.
