Key Lime Pound Cake

Key Lime Pound Cake is considered to be a really suitable dish for family gatherings and festive tables, when you are meeting friends or relatives at home and want to treat them with something.

For the main part

  • green food coloring, which is considered to be optional, so it is up to you to decide whether to take it;
  • 5 large chicken eggs;
  • 3/4 cup of buttermilk;
  • 3 cups of flour, you can take and ordinary one;
  • 2 cups of granulated sugar;
  • 1/3 cups of key lime juice;
  • 1/2 teaspoons of baking soda;
  • 1/2 teaspoons of baking powder;
  • 1 cup of softened butter;
  • 5 teaspoons of salt.

For Key Lime Buttercream Frosting

  • 1/8 teaspoon of salt;
  • 1/2 cup of softened butter;
  • 1 1/2 teaspoons of key lime zest;
  • 1-2 tbsp of milk;
  • 1 teaspoon of vanilla extract;
  • 2 cups of powdered sugar;
  • 3 tbsp of key lime juice.

First of all we would like to give you some directions as to the cake layers preparation.

  1. Preheat your oven up to the temperature of 190 degrees Celsius.
  2. Take the special 3 layered cake frying pans (it can be 10″ tube pan or two loaf pans).
  3. In small bowl it is necessary to combine buttermilk and lime juice. And then put these components aside.
  4. Whisk butter together with sugar until fluffy condition. After that add there eggs (one by one), whisking well to fully mixture.
  5. Take flour, requested amount of salt, some baking soda and powder. Combine them by stirring in a separate bowl.
  6. After that add your flour and buttermilk mixtures to purely butter mixture. You should do it in chain, starting and finishing with flour.
  7. Try not to mix the layers.
  8. Add some special food coloring. The level of its saturation may be any you like. Combine everything by stirring.
  9. Don’t forget to cover the prepared frying pans with butter. And after that bake your cake for 30 — 35 minutes (layered) or 50-60 minutes (pound).
  10. The level of preparation can be checked with an ordinary toothpick.
  11. Remove your cake from the oven and put aside inside the pans for 15 minutes.
  12. After that cool it completely.

And now some recommendations for frosting preparation:

  1. Take your electric mixer and combine the ingredients until the creamy condition.
  2. Add powdered and key lime juice in chain: 1 tablespoon at a time;
  3. Put there 1 tablespoon milk, whisking everything at low speed until blended and smooth condition after each of your additions.
  4. You can add 1 tablespoon of milk additionally if it is necessary.

Your tasty cake is ready. But we recommend to decorate it with key lime and kiwi slices.
