Food made “en papillote” are very succulent and full of flavor. When they are baked they get this special aroma and you cut them they smell simply indescribably delicious. This is recipe for Grematla, which is a mixture of parsley, lemon zest and garlic, which work for almost everything.
List of ingredients
• 3 Tbs. chopped parsley
• 2 cloves garlic, minced
• 1 Tbs. minced lemon zest
• 4 scallions (both white and green parts)
• 1 to 1-1/2 lb. fish fillet, in four equal portions
• Salt and freshly ground black pepper to taste
• 1 Tbs. lemon juice
• 3 Tbs. softened butter (optional)
1 Mince parsley, lemon zest and garlic and put aside.
2 Cut the scallions into 2-in lengths and slice them lengthwise, sprinkle with spices and lemon juice and, if you want, spread the top with butter.
3 Place fish on the four sheets of parchment, and top with a portion of gremolata.
4 Seal the packages and bake in a preheated to 450°F oven for 8 min.
