Appetizing steaks with egg-wine sauce

We present you a delicious and beautiful dish that can become a real decoration of any festive table. This steak turns tender and juicy. Meat, thanks to a special sauce, acquires a delicate taste and flavor.

List of required products:

  • beef fillet — 0.9 kg;
  • butter — 150 g;
  • vegetable oil — ½ tbsp;
  • white wine — 50 ml;
  • wine vinegar — 50 ml;
  • egg — 3 item;
  • tarragon — 2 tbsp;
  • onions — 1 item;
  • lemon juice — 2 tsp;
  • salt, pepper for 1 tsp.

Begin to cook


  1. Let’s prepare the sauce. Chop onion into slices. Then pour vinegar and wine, pour onions and tarragon (1 tablespoon) into the pot. We put on a slow fire. Cook for 5-7 minutes, then remove from heat and filter.
  2. From the eggs we separate the yolks and add to the resulting mixture. We put it on the steam bath and cook until the sauce thickens. Then put the butter in it and mix thoroughly, until it dissolves completely.
  3. Into the resulting mixture pour lemon juice, add salt, pepper and the remaining tarragon. Mix again and remove from heat. Leave to draw for 20 minutes.
  4. We cut beef fillet, salt and pepper it. Then fry in a well-heated frying pan. Cover the fried meat with foil and allow to cool slightly. Then put it on the dish and pour the sauce over it.
