Chicken shish kebabs with rice salad

Juicy flavored shish kebabs with an unusual peanut sauce and a hearty salad with crispy vegetables are considered to be a complete composition of a summer house dinner.

List of required products:

  • 1 kg fillets of chicken legs;
  • 10 stalks of green onion;
  • 1/2 cup soy sauce;
  • 1/2 cup brown sugar;
  • 1 cm of ginger root;
  • garlic — 3 cloves;
  • 1 tbsp. of sesame seeds;
  • 2 tbsp. of sesame oil;
  • lime for decoration.

For salad:

  • 2 cups of boiled rice, preferably basmati or jasmine;
  • 2 sweet red peppers;
  • 300 grams of red cabbage;
  • 2 medium carrots;
  • 1 small red onion;
  • 1 bunch of cilantro;
  • small bunch of green onions;
  • 1 cup peanut.

For sauce:

  • 1/3 cup of peanut butter;
  • 1 cm of ginger root;
  • 1 tbsp. honey;
  • 3-4 tbsp. rice vinegar;
  • 2 tsp. sesame oil;
  • salt.

Begin to cook


  1. Preheat the dry frying pan and fry the sesame seeds until they get golden brown hint. As a rule, it takes 2 minutes. Remove everything from heat. Finely chop the green onions. Ginger is cleaned and grated. Peel the garlic and chop it as well. In a large bowl combine the green onions, ginger, garlic, soy sauce and sugar. Stir well to allow the sugar to dissolve completely, and add sesame oil and sesame seeds.
  2. Cut the fillets into large cubes and place into a bowl with a marinade. Stir and cover with a film. Remove the bowl in the fridge for 4 hours.
  3. Remove the meat from the fridge and leave it at room temperature for 1 hour. Make the proper fire and mind that coals should get white ashes. Put the pieces of chicken into skewers. Fry over the coals for 10-12 minutes, often turning the skewers, so that the meat blushes uniformly.
  4. For the sauce, peel the ginger and grate it well. Mix peanut butter and honey and melt on medium heat or in a microwave. Mix well, add ginger, rice vinegar, salt and sesame oil. Gradually pour inside so much water to make a thick sauce.
  5. Peel vegetables for salad. Carrot should be grated, sweet peppers, red and green onions and coriander — chopped. Thinly chop cabbage. Chop the peanuts.
  6. Mix rice with vegetables and peanuts and season with salad dressing. Serve kebabs with rice salad and lime slices.
