Original chicken with apricots with Pesto sauce

Today we are going to present to you an unusual recipe for chicken. Such a chicken can be served at the festive table without any doubts. Or you can cook it at weekends for loved ones. In any case, it will appeal to everyone, even to especially naughty gourmets.

List of required products

  • dried apricots — 4 items;
  • sliced ​​almonds — 0.5 tbsp;
  • goat milk cheese — 60 g;
  • chicken egg (preferably of large size) — 1 item;
  • chicken breasts — 4 items (approximately 700 g);
  • bread crumbs — 1/3 tbsp;
  • salt — to your taste;
  • sweet peas — to your personal taste.

For Pesto sauce

  • olive oil — 1 tbsp;
  • ground almonds — 0.5 tbsp;
  • sweet peas — to your taste;
  • salt — to your taste;
  • fresh mint — 3 tbsp;

Begin to cook


  1. Preheat the oven up to 180 degrees Celsius.
  2. Then we take our meat. It should be washed well. With the help of a knife we ​​make a cutting on each piece from one side. The length of each is about 10 centimeters. We do this carefully so as not to cut the breast to the end.
  3. Take a deep bowl and put almonds (0.3 glass), goat cheese and apricot into it. Mix carefully. Stuff with the resulting mixture all the cuttings in the chicken breasts. Salt and pepper the meat.
  4. Take another container and place in it some bread crumbs as well as the remaining almonds. Stir everything carefully.
  5. Beat the chicken egg into the plate and whip it a bit.
  6. Dipped the chicken breasts in turn in an egg and roll into a mixture of nuts and bread crumbs.
  7. Pour olive oil on a non-stick frying pan and heat it. Fry it a bit. Put everything on a baking sheet and sent to a preheated oven. Bake for about 15 — 20 minutes.
  8. When serving, pour the dish with mint sauce «Pesto».

How to prepare the sauce «Pesto»

  1. Grind the mint and nuts in the electric grinder. During grinding, pour some olive oil.
  2. Add salt and pepper. The sauce is ready!
  3. Put it in the fridge and take it away in a few minutes before serving the dish on the table.
