We present you the recipe for a hearty and tasty pasta dish. This dish is ideal for dinner, because vegetables are pasta are combined perfectly. To this pasta you can add juicy chicken cutlets. Their recipe is on our website either.
List of required products:
- sugar — 0.5 tsp;
- sweet pepper (medium size) — 1 pc;
- salt — to your taste;
- garlic — 2 cloves;
- pasta (any kind you like) — 200 — 250 gr;
- spices — for your taste and preference;
- eggplants (medium size) — 1 pc.;
- cheese (should be grated) — optional;
- tomatoes — 2 pieces;
- parsley and dill greens — to your taste;
- onion (medium size) — 1 pc.;
- sunflower oil — for frying;
- Sweet pepper — to your personal taste.
Begin to cook
- Wash eggplant and peel them.Then cut them into circles and put them to a deep cup. Add the salt and mix well. Leave them for 20 minutes, as eggplants will give their juice and get rid of bitterness. In a certain time the eggplant is taken out and washed carefully. Then we chop them to the so called squares.
- Bulgarian pepper is cleared of seeds and cut into small pieces.Tomatoes are washed and crushed.
- Then it is high time to proceed to the onion.Clean it from the skin and cut into half rings.
- Heat the frying pan with vegetable oil and put onions into it.Fry it until golden hint. After that we add pepper inside and continue to fry for 4 minutes. Then add tomato, eggplant, sugar, pepper and spices and continue to stew under the lid for 7 minutes.
- After a while, add the crushed garlic and water (100 ml.), continue to stew for 3 minutes.
- Cook pasta.Pour water into a pan and put it on fire. Salt the dish lightly and put the pasta there. Cook until ready position.
- Then drain the water from the pasta and add the mixture with eggplant.Stir and divide into serving plates.
