Salad with chicken, cashew and lime

Salad of fried spicy chicken breast with caramelized cashew nuts and piquant dressing is considered to be unforgettable. As a rule, it is appreciated by everybody. Even the children, who are the naughtiest gourmets, eat it without any hesitations.

List of required products:

  • chicken fillet — 2 items;

The ingredients, which are used for dressing preparation:

  • vegetable oil — 5 tbsp;
  • soy sauce — 1 teaspoon;
  • fish sauce — 1 teaspoon;
  • green onions — 2 feathers;
  • cane sugar — 1 pinch;
  • sauce «Tabasco» — to taste.

Marinade:

  • honey — 1 tsp.;
  • soy sauce — 6 tbsp;
  • fresh grated ginger — 1 tsp.

Salad:

  • fresh cucumber — 3 items;
  • lime — 1 item;
  • daikon — 120 g;
  • sweet paprika — pinch;
  • cane sugar — 1/2 tsp.;
  • vegetable oil — 1 tsp.;
  • cashews — 60 g.

Begin to cook


  1. Take a small bowl and mix all the ingredients for marinade. Marinate the chicken for 10 minutes.
  2. Daikon is cut into strips or grated.
  3. Mix all the ingredients for dressing.
  4. Cut the cucumber into slices. Lime is divided into segments. Combine with the daikon in a large bowl. Heat the frying pan with a teaspoonful of vegetable oil, fry cashew nuts to a golden color, add cane sugar and paprika. When the sugar melts, mix the contents of the pan so that the nuts are covered with spicy caramel.
  5. Fillet is fried in a well-heated frying pan with the lid open for 7-8 minutes on both sides. Close the lid and cook another couple of minutes. The cooking time depends on the size of the fillets and on the temperature, so it can differ.
  6. Cut the chicken into slices and divide into portions. Salad is added with a dressing and put on serving plates. Lay the slices of the breast over the salad. Enjoy!
