List of required products
- 700 g of eggplants;
- 2 onions;
- garlic — 2 cloves;
- 100 g cashew nuts;
- 2 stars of anise tree;
- 1 red hot pepper;
- 400 ml of coconut milk;
- 4 tbsp. of vegetable oil;
- 1 stick of cinnamon;
- 2 tbsp. l. curry powder;
- 1 tbsp. ground turmeric;
- 1 tsp. flour;
- salt
Begin to cook
- Eggplants should be cleaned and peeled carefully. After that cut them into average cubes of 2×2 cm. Then turn them over with boiling water and throw in a colander. Let the water drain. Turmeric is mixed with flour. After that roll eggplants in it.
- Peel onion and garlic and chop them both finely. Nuts have to be chopped. Spicy pepper is chopped finely. Mind that all the seeds should be removed.
- Heat the oil in a wok and fry your prepared eggplants. As a rule, it takes about 6 minutes. Add garlic, onion, spicy pepper, nuts, coconut milk, cinnamon stick, stars of anise tree and curry. Salt and cook for other 7 minutes.
- You can always decorate your dish if you like. There is a great amount of ways to do it. The most typical one is to use greenery. What sort to give you preference? – It is up to you to decide.
