Ingredients
- 4 loin pork chops
- salt and pepper
Stuffing:
- 1 onion, grated
- grated rind of 1 orange
- 50 g cashew nuts, chopped
- 1/2 tsp sage
- 1 tsp Dijon mustard
- 50 g fresh brown breadcrumbs
- salt and pepper
- 1 egg, lightly beaten
- 1-2 tbsp oil
Garnish :
- orange slices
- parsley sprigs
Cooking Process
- Cut the rind and excess fat off the chops and season the chops with salt and pepper.
- Carefully cut each chop horizontally ,leaving joined at the bone.
- Mix together the onion, orange rind , cashew nuts , sage , mustard breadcrumbs , seasoning and bind with the egg.
- Place the stuffing inside the chops .
- Brush with the oil and cook under a medium grill for 8-10 minutes on each side or until the chops are golden and the stuffing is cooked .
- Serve garnished with orange slices and parsley sprigs.
