This popcorn is so delicious that it can be baged in a plastic bag and given as a gift or simply served in paper cones. If you want to decorate it try sliced almonds for the peanuts.
• 1 3-1⁄2-oz. package plain (unbuttered natural flavor) microwave popcorn
• cup packed light brown sugar
• 1⁄4 cup light corn syrup
• 6 Tbs. unsalted butter, melted
• 1⁄4 tsp. salt
• tsp. vanilla extract
• 1⁄2 tsp. baking soda
• 1cup lightly salted peanuts (extra large, if available), roughly chopped
1 Take a rimmed baking sheet with parchment paper and put aside.
2 Take the popcorn bag and do everything according to instructions. Take the large bowl and put popcorn from the bag there.
3 Mix the corn syrup, sugar, butter, salt and 2 tbs of water and put on a medium-high heat and bring to a simmer. Stir often and continue to simmer until 250°F on a digital thermometer, 3 to 4 minutes.
4 Turn off the heat and add vanilla and soda and pour the mixture on popcorn. By using spatula fold the caramel into the popcorn and pour the mixture on the baking sheet.
5 Bake for 1 h. and stir every 20min. After, remove from the oven and place on a cooking rack for 20min. break up the popcorn and serve or put in the container and save for up to 5 days.
