- 100 g fresh brown bdead crumbs
- 100 g demerera sugar
- 600 ml double cream
- 100 g walnuts, chopped
1. Line the grill pan with foil and brush with oil.
2. Sprinkle over the breadcrumbs and sugar and grill until brown and crisp.
3. Leave to cool.
4. Whip the cream until thick and standing in soft peaks, fold in the breadcrumbs, sugar and walnuts.
5. Pour into a rigid plastic container and freeze until firm.
