An interesting delicious dish: roll from fish

  • pink salmon — 1.5 kg;

For the quenelle mass

  • fish fillets — 1 kg;
  • egg whites — 4 pcs.
  • cream — 2 tablespoons;
  • salt and spices — to taste;

For sauce

  • butter — 50 g;
  • flour — 1 tablespoon;
  • onion — 1 item;
  • root of parsley — 1 item;
  • broth — 200 ml;
  • white wine — 2 tablespoons;
  • egg yolks — 3 pieces.
  • salt and spices — to taste;

Begin to cook

  1. First of all, we wash the fish well, clean it and remove the bones and skin. After that we cut the flesh with strips of 3 — 4 cm wide.
  2. We make a quenelle mass. In order to do this, grind the fish fillets, add egg whites and cream. Then beat this mass well. Salt and add spices.
  3. We take strips of fish and cover them with quenelle mass. After that, roll them and wrap it in cellophane. You can tie them with the help of the thread. Put away for 10-15 minutes and take the paper out.
  4. Make the sauce.We dilute the flour with broth, add previously chopped onions and parsley root. We put on the fire and cook for 15 minutes. After the required time the dish is cooled. Then you have to add the yolks, cooked with pieces of butter. We pour in wine, salt, add citric acid and pepper. After that, strain the sauce and pour with it the prepared fish rolls.
