Pork and Apple Casserole

It is not always necessary to brown stews and casseroles in added butter or oil if the liquid in which the meat simmers is well-flavored. Fruit and /or vegetables that simmer with the meat make servings look larger, and add to the flavor.


  • 500 g cubed lean pork
  • 1 large apple, cubed
  • 1 large onion, chopped
  • 2 stalk celery, sliced
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato sauce
  • 1 tbsp brown sugar
  • 3/4 tsp salt
  • 1/2 tsp dried thyme
  • 1 tsp dried sage
  • 1 1/2 cups water
  • cornflower to thicken
  • chopped parsley

Cooking Process

  1. Put all the ingredients except the cornflower and parsley into a casserole dish with a well-fitting lid.
  2. Cook below the middle of an oven heated to 150 degrees Celsius (300F) for 1 1/2 hours, stirring once if possible.
  3. When the meat is tender, thicken with cornflower paste and sprinkle with chopped parsley.
  4. Serve on noodles or with mashed potatoes, with pan-cooked cabbage abd carrots.
