This is one of my favorite pork fillet recipes. It is quick, has a wonderful flavor and if care is taken with the cooking time, should be very tender.
For 2 servings:
Ingredients
- 1 small pork fillet (250 g/9 oz)
- 1 tsp dark soya sauce
- 1 tsp sesame oil
- 1 clove garlic, chopped
Sauce
- 2 tsp cornflour
- 1 tsp instant chicken stock
- 1/4 cup (60 ml/2 fl oz) plum jam
- 1/2 cup (125ml/4 fl oz) water
- 1 clove garlic, chopped
Cooking Process

- Cut fillet into pieces about 5 mm (1/4 inches) thick.
- Mix the next four ingredients together, pour over the sliced pork and leave to stand for at least 10 minutes.
- Microwave at Full power for 2-3 minutes, stirring after each minute, or stir-fry in a large non-stick pan, stirring constantly, for 3-4 minutes.
- Cook until meat is no longer pink, but do not over-cook! (Fillet cooks in a very short time).
- Combine sauce ingredients.
- Microwave or simmer, stirring occasionally, until smooth and clear.
- Stir the meat into the cooked sauce and serve over rice with Tender-Crisp Zucchini.
