Ingredients
Strawberry Pie
- 1 baked deep dish pie shell
- 6 cups sliced fresh strawberries divided
- 1 cup sugar
- 3/4 cup water
- 3 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 tablespoon butter
Cream Cheese Whipped Topping
- 1 cup heavy cream
- 3 tablespoons cream cheese softened
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract

Slice strawberries. Mash some of the strawberries until you have 1 cup mashed. Place the remaining strawberries into the baked pie shell. Place into the refrigerator for later use.

Place 1 cup mashed strawberries into a large saucepan. Stir in sugar, water, cornstarch, and lemon juice. Bring to a boil and cook 1 minute until thickened. Remove from heat and stir in butter until melted.

Allow mixture to cool, 1 hour. Pour cooled mixture over the strawberries. Return pie to the fridge until set, about 4 hours.

In a large mixing bowl, use a hand mixer to beat heavy cream with cream cheese, sugar, and vanilla extract until stiff peaks form. Transfer to a piping bag to pipe designs onto finished pie, or serve each slice with a dollop of whipped cream.
