In the popularity list risotto takes second place in Italy after the pasta. There are several variations of its preparation. Today we have decided to choose a recipe for vegetable risotto.

What products to take
- 4 tbsp. olive oil;
- 1 cup of rice;
- 100 ml — white dry wine;
- 1 carrot;
- 200 grams broccoli;
- 2 tomatoes;
- 100 g of green peas;
- 1 onion;
- 100 g string beans;
- 3 cloves of garlic;
- 300 ml — water;
- to taste — spices;
Begin to cook
- Rice shouldn’t be washed. Why? — The matter is that this is a main feature of the risotto. — The starch must be preserved in the dish and there must be a certain consistency.
- Rice should be fried a little on a dry frying pan.
- First of all it is necessary to fry chopped onions with garlic in warmed oil.
- Then add the carrot, which have to be sliced into small cubes.
- Mix carefully and add rice.
- We pour the wine inside, cook everything before the liquid evaporates.
- Now add peas, beans and tomatoes. They should be chopped in advance, of course.
- We pour inside water, season the future dish with salt and spices.
- Stir carefully and stew for 15 minutes.
- We put broccoli and cook for 5 minutes.
- You may serve this dish immediately.
