At this time, simple and inexpensive products, from which we will prepare a wonderful salad, are present in every house. Salad «Autumn Miracle» is not just a delicious dish, nor an excellent occasion to surprise the guests and please loved ones. The recipe is very simple, cooking does not take much of your precious (especially at this time of year) time.
List of ingredients:
• 250 grams of fresh mushrooms;
• 2 medium aubergines;
• one ripe, fleshy tomato;
• two heads of onions;
• 5-6 cloves of garlic;
• 150 grams of hard cheese;
• one teaspoon of salt;
• black ground pepper — to taste;
• sunflower refined oil;
• 120 grams of mayonnaise.
1. Wash eggplants, cut the peduncles, peel and cut into large cubes.
2. In a deep bowl, pour water, add a teaspoon of salt and send the eggplant in it for 15 minutes.
3. Any fresh mushrooms (I have champignons) washed, dried and cut into thin slices.
4. Pour a little vegetable oil into the frying pan (about 70 grams), heat it and spread the mushrooms. Fry until golden in medium heat. At the end, salt and pepper to taste.
5. While the mushrooms are fried, prepare the onions. Two medium peeled onions are cut into thin semi-rings.
6. Fry onions in vegetable oil until golden brown.
7. Spread the bow with a blanket on a plate, covered with a paper towel: it will absorb all the excess oil.
8. Put the eggplant in the colander, to the glass all excess fluid. Then fry them over medium heat, stir occasionally, until golden brown (minutes 10-12).
9. All the roasted vegetables are left to cool down, and for the time being we will prepare the rest of the products.
10. Slice of hard cheese (absolutely any, for your taste) cut into small cubes, add to a bowl.
11. One large dense tomato (or two medium) is also cut into cubes (medium size) add to cheese.
12. Prepare the sauce. In the sauce bower spread mayonnaise of any fat content.
13. 5-6 large cloves of garlic is passed through the press and added to mayonnaise. Stir.
14. Cool eggplants to room temperature, onions and champignons are transferred to a salad bowl. Mix everything carefully with a spatula, fill it with mayonnaise.
15. Salad from vegetables can be served. Spread the salad in a ring, compact it. Then remove the ring and decorate the salad with small tomatoes and twigs of greens (you can use cherry tomatoes).
