- 1 lettuce, shredded
- 2 smoked mackerel fillets
- 4 hard boiled eggs
- 4 tomatoes, peeled and quartered
- 1 tbsp wine vinegar
- 2 tbsp oil
- 1 tsp prepared French mustard
- salt and pepper
- 1 tbsp chopped parsley
- Put the lettuce in a serving bowl.
- Skin and flake the mackerel.
- Roughly chop the hard boiled eggs.
- Mix together the mackerel, eggs and tomatoes and arrange on top of the lettuce.
- Combine the ingredients for the dressing and pour over the fish.
- Serve immediately.
