- 1 lettuce, shredded
- 2 smoked mackerel fillets
- 4 hard boiled eggs
- 4 tomatoes, peeled and quartered
- 1 tbsp wine vinegar
- 2 tbsp oil
- 1 tsp prepared French mustard
- Salt and pepper
- 1 tbsp chopped parsley
1. Put the lettuce in a serving bowl.
2. Skin and flake the mackerel.
3. Roughly chop the hard boiled eggs.
4. Mix together the mackerel, eggs and tomatoes and arrange on top of the lettuce.
5. Combine the ingredients for the dressing and pour over the fish.
6. Serve immediately.
