- 8 tomatoes
- 2 onions
- Coriander or parsley sprig to garnish
- 4 tbsp olive oil
- 1 tbsp wine vinegar
- Pinch of mustard powder
- 1 tsp sugar
- 1 tbsp chopped, fresh herbs, eg coriander, parsley, basil
- Salt and pepper
1. Thinly slice the tomatoes and onions, and arranged ia serving dish.
2. To make the dressing, put all the ingredients in a screw-topped jar and shake well.
3. Pour the dressing over the tomato and onion.
4. Garnish with a sprig of coriander or parsley.
