Cherry tomatoes with garlic bread

Mix small yellow, green and red cherry tomatoes. If you want to can do it before and do garlic bread before serving. This goes well with beer, so we can say this is a beer snack.

List of Ingredients

To marinate cherry tomatoes
• 2 pints cherry tomatoes, preferably mixed colors
• 2 scallions (white part only), chopped coarse
• 1/4 cup finely chopped parsley
• 1 Tbs. finely chopped rosemary
• 3 cloves garlic, minced
• 1/3 cup extra-virgin olive oil
• 3 Tbs. balsamic vinegar
• Salt and freshly ground black pepper
For garlic bread
• 3 to 4 Tbs. extra-virgin olive oil
• 3 cloves garlic, minced
• 4 large, thick slices of crusty bread
• 4 slices provolone cheese, 1-1/2 oz. each
• 1/4 cup grated Parmesan cheese

Cooking process

1 Mix tomatoes, parsley, scallions, garlic, rosemary, vinegar and olive oil in a bowl. Add salt and pepper to taste.
2 Cover the bowl and let it to marinate for 2-3 h. Stir occasionally. The tomatoes might crack, its ok, it will become more delicious.
3 Mix olive oil and garlic and leave for 10min.
4 Heat the broiler, brush one side of each piece of bread with the mixture and broil until it gets brownish.
5 Put a slice of provolone and sprinkle with Parmesan. Put the bread aside until you want to serve.
6 Before serving turn on the broiler and toast the bread and put in a soup bowl, add marinated tomatoes and sprinkle with Parmesan.
