Zucchini summer soup

Summer is time for light vegetable soups as your body requires something fresh and low-calorie. That is why we present the recipe of a delicious low fat soup where seasonal vegetables are the main component.

List of ingredients:

  • potatoes — 1 pc
  • zucchini — 1
  • sweet pepper — 1
  • tomatoes — 2
  • salt, pepper to taste
  • greens — 1
  • oil for roasting
  • water (broth) — 1 l

Cooking process

  1. Wash and dice all vegetables.
  2. Grind the greens. Fry the pepper and zucchini in the pan during 5 minutes, add the tomatoes. Stew until cooked.
  3. Grate the carrots and put them together with the potatoes into a pot with water (broth). Cook for 15 minutes.
  4. Add salt, pepper and stewed vegetables. Boil for another 5 minutes, add greens.
